
The trouble with having a chocoholic husband is that when you have a hankering for something sweet (and I don't have that very often), there will always be loads of chocolate in the house and therefore you'll probably have something chocolatey. Not a problem for chocoholics I guess, but for non chocoholics like me, it can get tiresome. But since I have time on my hands and I really need to use up these chocolate things before we have to bung them in the bin and I actually like baking means there's always one happy chocoholic in the house.
I wasn't in the mood for something savory when I woke up this morning, so I decided to make chocolate muffins. Funnily enough, while I was mixing the ingredients, my friend T (who is currently on holiday in Pattaya and another chocoholic) sends me sms saying "Yahoo! I just went bungee jumping! Wish you and A were here." It was funny because I was just sprinkling three different kinds of chocolate chips in the batter and thinking how perfect these muffins would be when the girls come over. Dark chocolate chips for A, milk chocolate chips for T and white chocolate chips for me.
Greased the muffin pan and whacked it into the oven and cleaned up. Thankfully, the recipe is easy peasy and there aren't a lot of things to wash. I heard noises in the backyard so I peeked to see if tata lizard was there. Tata lizard (I really must find a name for it) watched me unblinkingly this morning while I watered the plants. Probably waiting for the daily ration of chopped chicken. I made a baked chicken dish two nights ago and have been giving Tata lizard the leftovers. I didn't think it would like the chicken chunks, seeing as they probably prefer their prey live but that first day I sprinkled some chopped chicken right beside it and a few hours later, caught it with a large chunk in its mouth. It freaked when I yelled "you do like it!" and ran like crazy hehe.
Anyway, today's backyard noises come, courtesy of cute little dove, rooting through the dead leaves for food. Eh, pretend that's not the backyard, willya? We haven't gotten around to growing the grass yet hehe. I ran back to the kitchen and got some birdseed (we have some on hand to feed the finches and little doves like this one) and threw it all over the yard. Couldn't get a decent photo though, it kept running and I have crappy digicam substitute right now as our nicer digicams are both busted. It ran away when it first saw me, but eventually went back when it realised I was throwing food its way.
Yes, I know I need a pet. I've been looking at shelters and rescues to see if there's a suitable dog for us. We'll need a small one so it will be happy with the flat and the backyard. I don't think we have the space for a big dog. So far, there's a lonely yorkie (3 months old), a ruby King Charles(available in October), a year old cav poodle x and a 2-year old Jack Russell up for adoption that we are interested in. We need a dog that's compatible with other pets (since we might have multiple rescued wildlife at home at various times) or one young enough to train to be good with noncanines. I'd love a big dog and there are so many medium to large dogs that have been rescued that need good homes. I've seen some beautiful staffys, GSDs, cattle dogs all looking for homes. If only we had a bigger place.
Ackk! Quick look at the watch and realised that the muffins were probably done so ran to the kitchen and took them out to cool. And that (and lemon-mint iced tea) was brunch for me while voice chatting with my brother (at the office, working on a building design in Dubai) and my mom and Diding (at home in Bacolod). Daz will have to eat the remaining 11 muffins in the tin. Not that he'll mind, really.
TRIPLE CHOCOLATE MUFFINS:
You will need: 2cups self raising flour, 1/2c. cocoa powder, 1 c. caster sugar, 1 egg (beaten lightly), 90g butter (melted), 3/4c. buttermilk, 1/2c sour cream, 1/3c white chocolate chips, 1/3c dark chocolate chips, 1/3c milk chocolate chips.
Preheat oven to 180 degrees. Spray muffin pan lightly with oil to grease. Sift dry ingredients into a bowl, stir in remaining ingredients. Spoon mixture into prepared pan. Bake for about 15-20 minutes or until done.
